There are two main principles to store meat and fish to keep for later seasons; sun drying and smoke drying. If you are out in the open in hot sunny conditions, all you need to do is skewer the meat open and suspend on racks to dry. You need to keep the site of the rack away from the camp and from scavengers, also a top tip is to try and place where there is a slight breeze to keep away any flies. It can be ground and pounded up to make great survival food which is very nutritious and ideal for adding to soups and stews made on your camping trip or hiking adventure.
If you have issues trying to constantly keeps pests at bay during the drying process, then dry your caught fish in a smoke house. The method is simple. You just suspend the meat in an enclosed space with cool smoke passing through to speed up the drying process, this also prevents any airborne pests from settling on the meat. You need to make sure that the smoke is not too thick or too hot, if so then your hard earned fish will be ruined. For best results the smoke needs to be a hazy light blue.
You can build a smoking house very easily, it does not need to be airtight, but clad enough so that it can slow the passage of smoke through it. You just need sticks, cladding, plenty of branches and bark. You need to build a trench and create a fire with the bark. This is called a ‘smudge fire’, you then just channel the smoke through into your hut to create your perfect smoked meat.
